Braised Pork Shank with Pimenton & Tomato

  • 4 pork shanks
  • 1 yellow onion diced
  • 2 carrots diced
  • 1 head garlic chopped
  • 2 tsp coriander
  • 1 tsp black pepper
  • 1 pinch saffron (optional)
  • 4 tbls sweet Spanish paprika (pimenton)
  • 2 fresh tomatoes or 1 can whole peeled tomato
  • 1 cup white wine
  • 1 cup chicken stock

Sear the pork shanks on both sides until crusty and brown. Toast the spices and grind to a powder in the spice grinder. In the oil that you seared the shanks turn down the heat and add your onions, garlic, and carrots. Sweat the vegetables until soft and add the spice mixture and wine. Bring to a simmer and place the shanks back in the pot with the tomato and chicken stock.
