Breaded Pork Chop with Mustard, Roasted Cherries & Arugula

  • 1 Center cut pork chop
  • 2 Tsp stone ground mustard
  • ¼ cup Breadcrumbs
  • 1# cherries
  • 2 tbls balsamic vinegar
  • 1 tbls olive oil
  • Arugula to garnish
  • Salt and pepper to taste
  • Coat the pork chop with mustard and dredge in the breadcrumbs

Put cherries with their stems off and coat in olive oil and balsamic roast at 400 degrees until soft. Let cool and toss with arugula

Heat up a ¼ in olive oil in a cast iron pan and fry pork chop until brown and crisp on both sides. Drain the chop on a paper towel and let rest for 5 min. place chop on the plate and top with cherries and arugula. Drizzle with juices from the cherries roasting and enjoy!
