5 lbs pork shoulder
40 grams kosher salt
20 grams sweet spanish paprika
10 grams ground coriander
10 grams ground cumin
10 grams dried mexican oregano
5 grams jalapeno powder
5 grams garlic powder
5 grams chipotle powder
5 grams ground black pepper
¼ cup orange juice
3 tablespoons tequila
3 tablespoons red wine vinegar
