2 T olive oil
4 chicken cutlets
¼ cup maple syrup
1 Tbl orange marmalade
Juice of one lemon
Heat oil in non-stick pan. Add chicken, season with salt and pepper.
Cook til browned and opaque throughout.. Transfer to warm platter.
In same pan, over med heat warm maple syrup til bubbling. Stir in marmalade. Boil til thickened, about 1 min.
Pour sauce over chicken. Add lemon juice.
